Like a Sponge: Genoise, Sponge & Roll Cakes – March 2, 2019

Sponge cakes can be daunting, but they’re a delightful and versatile skill to have in your baking repertoire. We’ll be making a classic Victoria sponge, Polish wuzetka (chocolate sponge layered with cream and jam), a mousse-filled charlotte royale, and even a whimsically decorated joconde roll cake.
